How do you isolate a slice and make adjustments to it and not the entire loop. Every time I make an adjustment to one slice those adjustments are applied to everything....and I don't want that.

You cannot make adjustments to just one slice in Recycle. The adjustments that you make in recycle will be global, so they will effect all slices.
Your best bet is to slice it up and then load the rex file into an NN-XT.
This will enable you to alter each slice as you want.
To play back the rex file from a NN-XT you can load up a Rexplayer on another track, then load the same rex file and 'to track' it, then move the midi data from the Rex Player track to the NN-XT track. The Rex Player can then be deleated.

I thought that you could in the rack with the knobs below the LCD screen (or whatever it is) you can select slice pitch etc. right?

I'm guessing that you referring to the knobs below the screen on a DrRex player?
Well yes, you can alter some parameters for each individual slice by doing this, but you have far more options and control over each slice if you load it into a NN-XT.
